Undhiyu (a Gujarati mixed-vegetable dish) is a Surat specialty. Named after the Gujarati words “matlu”, which refers to an earthen pot, as well as “undhu,” which refers to being upside down. This is because they were traditionally cooked upside down in earthen pots that had been fired from above. This winter-season dish uses seasonal vegetables.
