In Mexican, dorados stand for golden, so this recipe is also known as golden tacos. Unlike traditional tacos, these ones use corn tortillas for the shell and they are stuffed with ground beef and cheese.

What are tacos dorados made of? 

These crispy tacos are easy to make; basic filling ingredients, corn tortillas, and your favorite toppings. Here is what you’ll need: 

  • Beef. Lean or extra lean ground beef is preferred, but standard beef works. 
  • Onion. 
  • Taco seasoning. Skip the heavily processed store bought kind and make your own.
  • Cheese. Any cheese that melts well works. I like using a Mexican cheese blend, which is a mix of Colby Jack and cheddar cheese.
  • Tortillas. Corn tortillas are a must; if you don’t have any on hand, small flour tortillas can be substituted. 
  • Filling and topping ingredients. Diced tomatoes, sour cream, hot sauce and guacamole. 

How to make them 

Whether you are an advanced cook or barely have any experience, this recipe is quick and easy and follows a simple 3-step process. Here is how you can make this recipe: 

Step 1- Cook the beef 

Start by placing a large skillet over medium heat then adding the beef and onion. Cook until the meat browns and the onion softens. Add the taco seasoning and let the mixture simmer for 10 minutes. 

Step 2- Prepare and cook tacos 

To prepare tacos, sprinkle cheese on the tortillas and then add a spoonful of cooked beef. Keep the tortillas open while filling them. Heat a skillet and add enough oil to cover the bottom of the pan. When the oil becomes hot, add the prepared tortilla to the pan and cook until it becomes flexible,usually around 30 seconds. Then, using tongs, fold the tortilla. 

Cook each side for 2-4 minutes until tacos become golden and crispy. Once done, remove from the pan and place on paper towels to drain extra oil. Repeat the process with all tacos. 

Step 3- fill and serve

Finally, gently open the tacos and fill with your favorite fillings and serve immediately.

Are flautas and tacos dorados the same? 

Flautas and tacos dorados are often assumed to be the same, however, they have some significant differences: 

Size- Flautas are bigger than dorados.  

Shape- The shape of flautas is round, but tacos dorados are flat. Because of this, dorados require much less oil to fry. 

Type of tortilla- Corn tortillas are used to make dorados, while flautas mostly use flour tortillas. 

Storage info 

Crispy tacos taste the best when they are served immediately. Preparing them in advance will yield soggy and/or dry dorados. However, you can prepare filling in advance and store them for later:

  • Up to 3 days: Place the meat filling in a shallow container and store it in the refrigerator.
  • 1 month or more: Let the meat filling cool to room temperature and store it in the freezer for up to 6 months.

What is the difference between a flauta and a taquito? 

Taquito is another name for tacos dorados. Their difference is the same as that of dorados.

  • 1 lb ground beef lean or extra lean
  • 1/2 large onion diced
  • 3 tablespoons taco seasoning
  • 1 1/2 cups shredded cheese * See notes
  • 10 small corn tortillas
  • 1 cup tomatoes diced
  • 1 large avocado mashed
  • 1/2 cup sour cream
  • Add beef and onion to a large skillet and place it over medium high heat. Cook for 4-5 minutes, until the meat is no longer pink and the onions have softened. Add the taco seasoning and mix until combined.

  • Remove the meat mix off the heat. Place a heaping amount onto each taco. Add shredded cheese but do not close the tacos.

  • Clean the pan, add oil, and place it over medium heat. Once hot, place the prepared tortilla flat into the pan. Cook for 20-30 seconds, or until the tortillas are pliable. Carefully fold them in half.

  • Cook the tortillas for 1-2 minutes per side, until crispy and golden. Repeat the process until all the tacos are cooked.

  • Carefully lift one side of the taco up and fill with tomatoes, avocado, and sour cream.

* I like using a Mexican cheese blend, but any cheese that melts well works.
