To sweeten my morning oats, I added 1 cup of zucchini to the mix.
Zoats or Zucchini Oats
I’ve been making it a challenge to eat at least one cup of vegetables with every meal (my goal is 5 cups per day). For lunch and dinner it is easy, but for breakfast it can be difficult. I was thinking of zucchini bread and wondered what it would taste like if I added it to oatmeal. It was delicious – you can’t even taste the zucchini! I added ripe banana to the zoats, sweetened them naturally with honey, and topped them up with blueberries and almonds. This zucchini oatmeal recipe can be made with many toppings such as this Cinnamon Apple-Spiced Oatmeal or Peanut Butter Oatmeal.
